Induction technology offers extremely precise temperature control because it generates heat directly in the pan itself. An electromagnet beneath the glass surface creates a powerful field which heats the pan itself directly (technically, it’s a process call ‘the Joule effect’). Because the heat is generated in the pan itself, temperature can be adjusted instantly – you don’t need to take a pan off the hob to stop it boiling over.
Another advantage of induction hobs is safety. Since the burner itself doesn’t heat up, the area surrounding the pan is always safe to touch and the residual heat beneath the pan dissipates quickly. And if no pans are on the hob, the cooking zones do not heat up even if they are turned on. A temperature sensor prevents overheating and switches off the power.
